Our organic EVOO monovarietal Cipressino (Lot C8) is obtained from olive trees that are about 15 years old.

The Cipressino variety is mainly cultivated in Apulia and Sardinia. It was originally used as a windbreak tree, to protect other crops. After the 1960s it rapidly spread from its original location called Pietrafitta di Palagiano, from which the name “Pietrafitta olive tree” generates. From Apulia this olive tree was imported into Sardinia, where began to be extensively planted for olive oil production. This way the Cipressino lost its original function of a windbreak tree to become a production tree. It is a beautiful tree, grows very slowly, and can age several centuries. The Cipressino variety produces an oil with a medium level of fruitiness, pungency, and bitterness, with prevailing hints of fresh almonds [source: www.olimonovarietali.it].
